Prepare for an elevated coffee break. Position whipped cream, with just a touch of vanilla, atop your favorite brew. We're crushing hard on this keto-approved treat.
 
Ingredients
 
 Servings 1
  • 1 cup coffee
  • 4 tablespoons heavy whipping cream
  • ¼ teaspoon vanilla extract
  • cocoa powder or ground cinnamon (optional)
 
Instructions
  1. Make coffee as usual.
  2. Whip the cream with a little bit of vanilla extract until soft peaks form.
  3. Add coffee to a big cup or mug. Add a dollop of cream on top and an optional sprinkling of cocoa powder or cinnamon.
  4. Serve immediately, preferably with a few of your favorite nuts on the side.
Tip
If you want to transform this drink into a low-carb dessert, just add a small piece of dark chocolate, with a cocoa content of at least 70%, to the bottom of your cup before you add the coffee. By the time you're finished drinking, you'll find a delicious piece of melted chocolate. Keep a spoon within reach!

Crispy Roasted Chickpeas

Quick And Healthy Snacks
 

Crunchy and spicy is a combination that we love in our food! Bake your own crispy chickpeas for a tasty and healthy snack.

INGREDIENTS 
  • 2 15-ounce cans chickpeas
  • 2 tbsp extra virgin olive oil
  • 1 tsp Himalayan salt
  • 2 to 4 tsp spices such as chili powder, curry powder, garam masala, cumin, smoked paprika, rosemary, thyme, or any of your favorite herbs or spices
 
METHOD 
Preheat oven to 400°F (200°C). 
Rinse and drain the chickpeas by pouring chickpeas into a strainer and rinsing with running water. 
Pat the chickpeas very dry with a clean dishtowel or paper towels.  They should feel dry to touch. 
Toss the chickpeas with olive oil and salt, and spread the chickpeas out in an even layer on the baking sheet.
Roast the chickpeas in the oven for 20 - 30 minutes until golden and crisp, checking every 10 minutes and giving the pan a shake.
Toss the chickpeas with the spices.
Besides eating these chickpeas as a snack, you can toss them in salads or sprinkle over soup in place of croutons.

Pre-Workout Shake

Not only will this sinfully delicious smoothie give you a burst of natural energy, it gives you a punch of protein and some up-and-go before an intense workout session! Complete with electrolytes, protein, energy and a buzz of caffeine to help you go that extra mile! 
INGREDIENTS
  • 1 coffee shot 
  • 1 tbsp raw cacao 
  • 2 tbsp protein powder
  • 1 cup coconut milk or water 
  • 1 tbsp honey or 1 Medjool date
WHAT TO DO 
  1. Blend all ingredients together until smooth and creamy. 
  2. Drink 30 minutes before intending to work out.

Coconut & Macadamia Crusted Salmon

This delightful and oh-so-delicious dish is brimming with nutrients to heal and seal your gut. Salmon is high in omega-3 fatty acids to fight inflammation. Like all seafood, salmon also supplies zinc, which tends to be less well absorbed in people with digestive issues.


INGREDIENTS   serves 2

  • ½ cup macadamia nuts
  • 1 cup shredded coconut
  • 1 egg
  • 2 salmon fillets, bones removed
  • 1 lemon
  • Green salad leaves, to serve
  • Olive oil
  • Salt and pepper, to taste
 

DIRECTIONS 

  1. Preheat oven to 360°F (180°C)
  2. Combine macadamia nuts, coconut and a little salt and pepper in a food processor to form a rustic crumbing mixture.
  3. Beat egg in a small shallow bowl.
  4. Dip salmon fillets in egg mixture before coating thoroughly with the crumbing mixture.
  5. Transfer crumbed fillets onto a lined or greased baking tray. Bake in oven for 15 minutes or until salmon is cooked to your preferred level of 'doneness'.
  6. Serve salmon with a side of green salad leaves, drizzle of olive oil and wedge of lemon.

Foil-Baked Fish

Here's a simple, healthy, light summer meal!  And there are a number of reasons for the aluminum foil... Foil contains any mess and is easy to discard after eating.

  1. You can bake it in your oven or on an outdoor grill.
  2. You can cook various vegetables right along with the fish.

 

 All you need is:

  • A couple of fillets of your favorite white fish
  • A tablespoon of olive oil
  • 4 lemon slices
  • Some green beans and sliced zucchini
  • A few shakes of lemon pepper

Tear off a nice big sheet of aluminum foil. Remember that you will have to wrap up all your fish and vegetables in one secure package. Don't let the liquids leak out because they will keep your fish juicy and succulent. 

Instructions:

  1.  Place the fish on the foil.  (If you like onion you can lay the fish on some onion slices).
  2. Drizzle on the olive oil, squeeze the lemon slices over the fish and place the slices on top. *You can add some vegetables (sliced zucchini and green beans are nice) and shake on some lemon pepper (or your own favorite seasoning).*
  3. Wrap tightly and bake in the oven or on a grill at 350 degrees for about 20 minutes.
  4. Serve in the foil with perhaps some steamed broccoli and lemon juice.

Zucchini, Lemon and Poppy Seed Muffins

INGREDIENTS

  • 2 cups spelt flour
  • 1 tbsp baking powder
  • 2 tbsp poppy seeds
  • ½ cup chopped walnuts
  • Zest of one lemon
  • ½ cup honey
  • Juice of one lemon
  • ¾ cup almond milk
  • 2 eggs, beaten
  • 1 large zucchini, grated (approx. 1 cup)
DIRECTIONS
  1. Preheat the oven to 180° C or 356° F.
  2. Combine the flour, baking powder, poppy seeds, walnuts and lemon rind in a large mixing bowl.
  3. In a separate, small mixing bowl, combine the honey, lemon, almond milk and eggs. Whisk gently until everything is well combined.
  4. Pour wet ingredients into the dry ingredients and stir until combined.
  5. Gently fold in the grated zucchini.
  6. Pour the batter into greased muffin tins and bake for 30 minutes or until golden.
  7. Insert a sharp knife into the center and if the knife comes out clean you will know they are ready.

Creamy Mushroom Soup Recipe

Mushrooms have the ability to help boost your immune system, providing you with numerous vitamins, minerals, and enzymes.
Their hearty, earthy flavors become the star in a soul-warming soup like this!

INGREDIENTS

  • 1 onion, diced
  • 2 garlic cloves, crushed
  • ½ tsp finely chopped ginger
  • 60g (2 ¼ oz/ 1 cup) broccoli, roughly chopped
  • 450g (1 lb/ 1 bunch) English spinach
  • 600g (1 lb 5 oz/ 1 bunch) bok choy (pak choy)
  • 155g (5 ½ oz/ 1 cup) diced butternut pumpkin (squash)
  • 1 litre (35 fl oz/ 4 cups) vegetable stock
  • 250ml (9 fl oz/ 1 cup) coconut milk
  • 1 tbsp nutritional yeast flakes, to serve 

DIRECTIONS

  1. In a large pot over medium-high heat, sauté onion, garlic and mushrooms. 
  2. Add thyme, coconut cream and stock, simmer for 10-15 minutes.
  3. Remove soup from heat, and allow soup to slightly cool, then blend (in blender or food processor) in batches until you have a smooth puree. 
  4. Taste and add salt and pepper if needed.

Spinach Dip Surprise

Description Warm creamy spinach that can be served as a side dish with your favorite protein or an appetizer with cut veggies and pita chips

Ingredients 1 medium onion chopped
2 tbsp butter
2 tbsp all-purpose flour
1/2 tsp salt
3/4 to 1 cup fat free milk
2 pkgs 10oz frozen chopped spinach, thawed and drained
1/2 cup salsa or picante sauce
1 cup 2% shredded cheddar
Directions In a saucepan, saute onion in butter until tender. Stir in flour and salt until blended. Slowly stir in milk . Bring to a boil; cook and stir 2 min or until thickened and bubbly. Stir in spinach and salsa.Then stir in 3/4 cup of cheddar and transfer to a 8-in. square baking dish. Sprinkle with rest of cheese. Bake at 350 uncovered for 20 to 25 min or until heated through.

Avocado-Buttermilk Soup with Crab Salad

This simple, no-cook soup is garnished with delicious orange-infused crabmeat. A vibrant, green-hued bowlful set before a hungry diner will not last long-take our word for it. Although it is intended to be rich and creamy, if the soup seems a little too thick, add 1 to 2 tablespoons more buttermilk.


Ingredients
3/4 cup fat-free buttermilk
1/2 cup chopped fresh tomatillos
1/2 cup fat-free, lower-sodium chicken broth
3/8 teaspoon salt
2 ripe peeled avocados, pitted
1 serrano pepper, seeded
1 small garlic clove
2 tablespoons minced red bell pepper
1 tablespoon chopped fresh chives
1 teaspoon fresh lemon juice
1/2 teaspoon grated orange rind
8 ounces lump crabmeat, drained and shell pieces removed

Preparation
  1. Place first 7 ingredients in a blender; process until smooth.
  2. Combine bell pepper and remaining ingredients; toss gently to combine.
  3. Spoon about 3/4 cup soup into each of 4 bowls; top each serving with about 1/3 cup crabmeat mixture.
