You could look at some of the "over 50" workouts or some of the senior workouts if he is older. A good place to start strength training is the Weight Training for Dummies workout. It moves very slowly but shows good form for basic exercises like biceps curls. It does have a few squats and lunges for the lower body though. Another good one if you can find it is Leslie Sansone's Short Cuts Upper Body and Short Cuts Lower Body.  The upper body is all done sitting in a chair (but it's not too easy), and the lower body is all floor work.
