Almond Broccoli Soup Recipe

Almond Broccoli Soup

Rich in calcium, magnesium, and protein, almonds help strengthen and renew bone and tissues while alkalizing the body and supporting the lungs. Add a cup of calcium-rich tofu and this recipe is even more beneficial to your bones—as well as a complete meal.

Plan ahead: Soak the almonds in 3 cups of water for 8 to 12 hours at room temperature to let them germinate. This enlivens the almonds, making them more nutritious (and less fattening).

Yield: 6 cups
Cooking Time: 20 Minutes
Prep Time: 15 Minutes
Ingredients:
  • 1 cup raw almonds, soaked*
  • 4 cups water
  • 2 cups bite-size broccoli florets
  • 1 cup shredded bok choy
  • 1 tsp minced fresh tarragon
  • ½ tsp dried rubbed sage
  • ¼ tsp black pepper
  • 1 tsp oil
  • 1 cup sliced cremini or button mushrooms
  • 1½ tsp fresh minced garlic (1-2 cloves)
  • ¼ tsp salt
  • ¼ cup Bragg Liquid Aminos or white or yellow miso

*The almonds will expand to about 1½ cups after soaking. Use all of them.

Instructions:
  1. Strain the almonds and rinse. Place the soaked almonds and water in a blender and blend until smooth. Strain the pulp through a fine sieve, pressing the pulp with the back of a spoon to release the milk. (Alternatively, you can strain through a colander lined with 2 layers of cheesecloth, then twist the cloth to squeeze out all the milk.) Discard the pulp.
  2. Place the almond milk in a 3-quart pot over medium-high heat. Add the broccoli, bok choy, tarragon, sage, and pepper. Bring to just under a boil, reduce the heat to medium-low, and simmer for 5 to 7 minutes until the broccoli is tender.
  3. Meanwhile, heat the oil in a small skillet over high heat. Add the mushrooms, garlic, and salt and sauté for a few minutes until they begin to brown. Add this to the soup.
  4. Remove the soup from the heat. Add the Braggs or ladle ½ cup of broth into a cup and combine with the miso until smooth; stir this into the soup. Ladle into bowls and serve.

Rustic Tomato Soup

Rustic Tomato Soup

This is a perfect “cure-all” soup for a cold day. It’s full of intricate flavors that blend seamlessly, and it’s loaded with everything that's good for you. Serves nicely with toasted bread and butter.

Yield: 4-6 Servings
Cooking Time: 40 Minutes
Prep Time: 10 Minutes

Ingredients:
2 cloves garlic 1 bunch of washed and chopped Swiss chard
1 leek 4 tomatoes, cut into pieces
3 carrots 1/2 tsp ground cumin
1 red bell pepper 1 tsp ground oregano
1 head of broccoli 1-1/2 tsp salt
1 zucchini 1/2 tsp pepper
2 Tbsp olive oil 1 pinch (careful, a very small pinch) of cayenne pepper
3 Tbsp liquid aminos (Bragg's is a good one to use) 2 or more cups of water
Instructions:
  1. Chop garlic, leek, carrots, red pepper, broccoli, and zucchini into small bite-sized pieces.
  2. In medium saucepan, sauté the leek, carrots, and garlic in olive oil over medium heat for approximately 5 minutes. Add red pepper, zucchini, and broccoli. When vegetables begin to soften, add liquid aminos. Cook until vegetables are tender. Turn off heat. Set aside.
  3. In separate large soup pot, add chopped chard, tomatoes, and spices (cumin, oregano, salt, pepper, and cayenne) and turn to medium heat. Keeping the lid mostly on, but stirring occasionally, let the vegetables cook until the tomato skin starts peeling away and the chard has reduced in size (approximately 10 to 15 minutes).
  4. Add all vegetables from the saucepan to the pot of tomatoes and Swiss chard. Add the 2 cups of water, or more if you prefer a thinner soup. Turn to high heat, stirring occasionally until almost boiled.
  5. Turn off heat and serve.
